Champion Organic Collard Seeds – Cold-Hardy, Heirloom Greens
Don’t sleep on collards—they’re one of the easiest and most rewarding greens you can grow. Champion Organic Collards are especially productive, cold-hardy, and flavorful, producing lush, dark-green leaves from early spring through late fall. With a little protection, some plants will even overwinter and return in spring with tender baby greens and edible flowering stalks (raab). In fact, many gardeners report these hardy plants lasting multiple seasons if flowering stalks are removed.
Collards sweeten with cold weather and are packed with nutrients. Prepare them like kale—young leaves sautéed with garlic and soy sauce are a standout. Or go traditional with a slow-cooked “mess o’ greens” and smoky ham hocks. Great for fresh use or for freezing after blanching.

Planting Windows:
- Indoors: Start seeds 3/15–8/1 (72–85°F, use heat mat if needed)
- Outdoors: Direct sow 4/15–8/15
- Germination: 5–8 days
- Spacing: Sow in groups of 3–4 seeds, ½” deep, spaced 12” apart. Thin to strongest plant.
- Cold Hardy: Tolerates frost; flavor improves with cooler weather
- Yield: Harvest leaves regularly once plants are mature. Don’t remove more than ⅓ at a time.
- Perennial Potential: May survive multiple years with care
- Pest Tips: Watch for deer, rabbits, and caterpillars. Use BT spray or hand-remove caterpillars as needed.
Seed Saving Info:
Collards are Brassica oleracea and will cross with others in the same family (kale, broccoli, cabbage, etc.). Isolation distance of ½ mile required. Must overwinter to set seed. For good genetic diversity, save seeds from at least 10–50 plants.
