Nozaki Early Napa Cabbage Seeds – Best Open-Pollinated Variety for Fall Gardens & Fermentation

Nozaki Early Napa Cabbage is a high-yielding, cold-hardy heirloom variety, perfect for fall and winter gardens. Unlike hybrid Napa cabbages, this open-pollinated (OP) variety produces compact, dense heads with crisp, flavorful leaves ideal for kimchi, fermentation, soups, and stir-fries. While not all plants will form tight heads, the loose-leaf varieties still offer nutrient-rich, tender greens for cooking. If you're looking for a reliable, disease-resistant, and flavorful cabbage that performs well in organic gardens, raised beds, and no-till farming, Nozaki Early is an excellent choice.

Why Grow Nozaki Early Napa Cabbage?

  • Superior Fall Harvest Variety – Best suited for late summer planting and cool-weather growth.
  • Delicious & Versatile – Ideal for kimchi, fermenting, soups, roasted greens, and winter storage.
  • Fast Maturity & Reliable Yield – Produces heads in just 60 days, earlier than most OP varieties.
  • Cold-Tolerant & Stores Well – Harvest before frost and store at 33°F for months.
  • Great for Raised Beds & Organic Gardens – Performs well in intensive gardening systems.
  • Self-Sufficient & Seed-Saving Friendly – An excellent variety for homesteaders and heirloom seed collectors.

How to Grow Nozaki Early Napa Cabbage:

  • Planting Time: Best for fall gardens. Start indoors 7/1 - 7/15, or direct sow outdoors 7/15.
  • Germination Temperature: 80-90°F (use a heating mat if needed). Germination time: 3-5 days.
  • Transplant Outdoors: 8/1 - 8/7, spacing 18 inches apart.
  • Direct Sow Outdoors: Plant 3-4 seeds per hole, ¼” deep, spaced 18 inches apart. Thin to the strongest plant.
  • Pest Protection: Use row covers, organic sprays, or companion planting to deter flea beetles, slugs, rabbits, groundhogs, and deer.

Harvesting & Storage:

  • Harvest heads when firm to the touch, cutting below the head with a knife.
  • For non-heading plants, harvest individual leaves before frost or bolting.
  • Store at 33°F for long-term preservation.

Seed Saving for Heirloom Gardeners:

  • Biennial Crop: Overwinter plants and replant in spring for seed production.
  • Cross-Pollination: Will cross with Brassica rapa (mizuna, turnips). Isolation distance: ½ mile.
  • Ideal for Homesteading & Seed Saving – Maintain genetic diversity with a minimum population of 20-50 plants.
